Gluten Free Coconut Chocolate Muffins

Ingredients

205ml Coconut Flour

1/2 Cup Cassava Flour

2  teaspoon baking powder

80ml Cocoa Powder

3/4 Cup Full Cream Milk

2 teaspoon Vanilla Essence

125ml plus 2 1/2 tablespoon Brown Sugar

125ml Melted Butter

4 teaspoon cinnamon

Roughly chopped dark milk chocolate

Method:

1. In a bowl, whisk together the milk, vanilla essence, and eggs. Add the sugar and mix well.

2. In a separate bowl, mix the coconut flour, cassava flour, baking powder, and cinnamon.

3. Add the flour mixture to the milk mixture. Mix until well combined.

4. Line your muffin pans with 12 muffin liners. Divide the mixture amongst the muffin liners. Top with the chocolate.

5. Bake for 12 to 15 minutes.
