Golden, citrus-kissed muffins made with real orange zest and love.

There’s something comforting about the aroma of freshly baked muffins — especially when citrus is involved. These Orange-Infused Muffins bring brightness, sweetness, and just the right amount of nostalgia. They’re tender, lightly sweet, and beautifully fragrant thanks to orange zest rubbed directly into the sugar — a small step that makes a big difference.

Whether you’re looking for a teatime treat, a lunchbox filler, or a quick weekend bake, these muffins come together with pantry staples and no complicated method. Just mix, scoop, bake, and enjoy.

Ingredients

  • Zest of 2 medium oranges
  • 250 ml castor sugar
  • 250 ml vegetable oil
  • 250 ml full-cream milk
  • 3 eggs
  • 1 teaspoon vanilla essence
  • Juice of 1 orange
  • 2½ cups wholewheat cake flour
  • Pinch of salt
  • ¼ teaspoon bicarbonate of soda
  • 1 tablespoon baking powder

Method

  1. Preheat your oven to 180°C. Line a muffin tray with paper liners.
  2. In a large bowl, add the orange zest and castor sugar. Use your fingertips to rub the zest into the sugar until the mixture becomes fragrant and slightly moist.
  3. Add the oil, milk, vanilla essence, orange juice, and eggs. Whisk until well combined.
  4. Add the flour, baking powder, bicarbonate of soda, and salt. Whisk gently until just combined — a few small lumps are fine.
  5. Spoon the batter into the lined muffin cups, filling each one about three-quarters full.
  6. Bake for 18–20 minutes, or until the tops are lightly golden and a skewer comes out clean.
  7. Let the muffins cool slightly before serving.

Tips & Variations

Chocolate Chip Twist:
Fold in 1/2 cup dark chocolate chips before baking.

Glazed Muffins:
Mix 1/2 cup icing sugar with a tablespoon of orange juice and drizzle over cooled muffins.

Add Texture:
A tablespoon of poppy seeds adds crunch and pairs beautifully with citrus.

Storage

These muffins stay soft for 2–3 days in an airtight container. They also freeze well — just wrap individually and store for up to 2 months. Reheat in the microwave or air fryer until warm.

Serving Suggestions

  • With tea or coffee or hot chocolate.
  • Warm with butter (muffins slightly warmed up for a cosy feeling!)
  • As a lunchbox treat.
  • With a side of Greek yoghurt and fresh fruit.
