1. Add your coconut oil, eggs, and sugar to a bowl. Whisk thoroughly.
2. Add the milk, vanilla essence, and lemon juice.
3. Add the flour, bicarbonate of soda, salt, and baking powder.
4. Mix well and add the mixture to a lined baking pan. Sprinkle a teaspoon of sugar on the top and bake for 45 to 50 minutes or until a tester comes out clean.
5. Remove the oven and let it cool down.
6. After it has cooled down, dust the top with icing sugar and sprinkle the lemon zest all over. Serve and enjoy.
