I love finding different ways to use my crops and I must say that I enjoyed this salad.
Ingredients:
Homegrown organic Lettuce mix
Hubbard Squash – roasted and seasoned with salt & pepper.
Chicken – pan fried and seasoned with chicken spice & paprika. I used no salt here as the chicken spice is salty enough. I just tore a chicken breast fillet with my hand.
Garnished with homegrown organic fresh flat leaf parsley.
This is quick to make and tastes great. I make my own dressing and this time, I used apple cider vinegar, chutney and olive oil.
