These Orange-Infused Muffins bring brightness, sweetness, and just the right amount of nostalgia. They’re tender, lightly sweet, and beautifully fragrant thanks to orange zest rubbed directly into the sugar — a small step that makes a big difference.
Whether you’re looking for a teatime treat, a lunchbox filler, or a quick weekend bake, these muffins come together with pantry staples and no complicated method. Just mix, scoop, bake, and enjoy.
Ingredients
- Zest of 2 medium oranges
- 250 ml castor sugar
- 250 ml vegetable oil
- 250 ml full-cream milk
- 3 eggs
- 1 teaspoon vanilla essence
- Juice of 1 orange
- 2½ cups wholewheat cake flour
- Pinch of salt
- ¼ teaspoon bicarbonate of soda
- 1 tablespoon baking powder
Method
- Preheat your oven to 180°C. Line a muffin tray with paper liners.
- In a large bowl, add the orange zest and castor sugar. Use your fingertips to rub the zest into the sugar until the mixture becomes fragrant and slightly moist.
- Add the oil, milk, vanilla essence, orange juice, and eggs. Whisk until well combined.
- Add the flour, baking powder, bicarbonate of soda, and salt. Whisk gently until just combined — a few small lumps are fine.
- Spoon the batter into the lined muffin cups, filling each one about three-quarters full.
- Bake for 18–20 minutes, or until the tops are lightly golden and a skewer comes out clean.
- Let the muffins cool slightly before serving.

Tips & Variations
Chocolate Chip Twist:
Fold in 1/2 cup dark chocolate chips before baking.
Glazed Muffins:
Mix 1/2 cup icing sugar with a tablespoon of orange juice and drizzle over cooled muffins.
Add Texture:
A tablespoon of poppy seeds adds crunch and pairs beautifully with citrus.
Storage
These muffins stay soft for 2–3 days in an airtight container. They also freeze well — just wrap individually and store for up to 2 months. Reheat in the microwave or air fryer until warm.
