Made this hearty vegetable soup for my colleagues using our vegetable off cuts. I’m so glad everyone gobbled it up. And of purse, my little agenda to have my colleagues see that meatless meals can be tasty was served too. 😜

This cheesecake is incredibly very low on sugar as we aren’t fans of overly sweet things.
