Fried Cauliflower Rice

This dish is great on its own and just needs a protein of choice for meat lovers. It can also be served with grilled halloumi cheese, soft boiled or poached eggs, or seasoned tofu.

It is filling and a great alternative to rice and heavy starches.

Ingredients:

3 1/2 Cups frozen mixed vegetables (carrots, green beans, sweet corn, and green peas)

5 cups frozen Cauliflower Rice

3 Tablespoons Butter

2 1/2 Tablespoons Vegetable Seasoning

1 1/2 Cups finely sliced baby spinach

1 Red Apple, finely diced and drizzled with lemon juice

1/3 Cup pitted olives finely diced

Freshly Ground black pepper

2 Tablespoons Extra Virgin Olive Oil

Fresh juice of 1/2 a medium-sized lemon.

Seasoning or plain table salt. I used Moringa seasoning salt.

Method:

  1. With a pan on medium heat, add the frozen mixed vegetables. Cook until the water/ice has cooked out but not dried out.
  2. Add the frozen cauliflower and butter.
  3. Once the cauliflower has defrosted, turn the heat off and allow the vegetables to cool off while you assemble your salad.
  4. In a salad bowl, add the baby spinach, the red apple, olives, and the cooked cauliflower and mixed vegetables.
  5. Mix the ingredients together and add drizzle with extra virgin olive oil and lemon juice. Toss the ingredients together and serve.
