Zuccini & Mushroom Cabbage

Ingredients

3 Tablespoons Coconut Oil

1/2 Medium Onion, sliced

3 Cups White Cabbage, roughly chopped

3 Cups Mixed Mushrooms, sliced

2 Teaspoons Soy Sauce

2 Teaspoons Mirin

1 Teaspoon Mixed Dried Herbs

1 Tablespoon Ground Ginger, divided.

2 Cups Zuccini rounds

Salt, Black Pepper

Method:

1. Sautรฉ the onion with Cayenne Pepper and ground ginger for 5 minutes.

2. Add the Cabbge and cook for a further 5 minutes.

3. Add the mushrooms and more ginger. Stir regularly. Cook for 5 minutes.

5. Add the zuccini, herbs and Sauces. Cook for 10 to minutes. Season with salt and paper to taste.
