Banana Bran Muffins

Ingredients:

3 Overripe/Soft Bananas

2 Large eggs

3/4c Granulated Sugar

1 teaspoon vanilla essence

125ml Melted Margarine or butter

1 1/2c Cake Wheat Flour

1 teaspoon bicarbonate of soda

1 teaspoon baking powder

3/4 teaspoon salt

1 teaspoon Cinnamon

1/4 teaspoon Nutmeg

1/4c Wholewheat Bran

Method:

Preheat your oven to 180 degrees.

1. Mash the bananas into a mixing bowl.

2. Add the sugar, eggs, vanilla essence, and whisk.

3. Whisk the melted butter in once it has cooled off.

4. Place a sift over the mixing bowl and sift in the flour, bicarbonate of soda, baking powder, cinnamon, nutmeg, and salt. Mix until well combined.

5. Add the bran and fold it in.

6. Use an ice cream scoop to pour the batter into lined muffin pans. I used the 12 hole muffin pan and used 1 scoop for each muffin.

7. Bake for 15 to 18 minutes.
