Blended, Dairy Free Orange Muffins

Ingredients:

2 1/2 Oranges. Washed and chopped with the skin on and green bit removed.

1c Castor Sugar

2/3c Sunflower Oil

3 Medium Eggs

1/2 tsp Vanilla essence

2c Wholewheat Cake Flour

1 tbs Baking powder

1/4 tap bicarbonate of soda

Pinch of salt

Method:

1. Pre-heat your oven to 180 degrees.

2. Blend the oranges, oil, and sugar.

3. Pour the blended mixture into a mixing bowl. Remove any lumps.

4. Add the eggs and vanilla essence to the blended orange mixture. Whisk together.

5. Sift in the flour, baking power, and bicarbonate of soda. Mix well with a spatula or spoon.

6. Pour 4 tbs of the battery into each muffin liner on your muffin baking tray.

7. Bake at 180 degrees for 20 minutes.

8. Remove the muffins onto a cooling rack.
